The Socamom Kids Kitchen: Taco-zagna!

I would have taken a picture, but it was gone before I got a chance! With Hurricane Irene threatening to turn off the power, I was reluctant to do a full lasagna that would take boiling, browning, baking, etc.  So we did a quick and easy Taco-zagna!

Serves 8


2 cans of refried beans

3 cups of shredded mexican cheese blend

1 lb of ground turkey (you can substitute beef if you would like)

1 envelope of taco seasoning

18 small corn tortillas

Taco sauce

Optional toppings:

sour cream



jalepeno peppers



Preheat oven at 375.

Brown ground turkey and prepare with taco seasoning according to package directions. Line ungreased casserole pan (9 x 12) with 6 corn tortilla shells.  Spread 2 cans of refried beans over shells.  Add thin layer of taco sauce. Sprinkle 1 cup of cheese. Add second layer of 6 shells. Spread seasoned meat (drained) over shells. Add taco sauce. Sprinkle 1 cup of cheese.  Add third layer of 6 shells.

Bake covered with foil for 35 minutes.  Remove foil, and add taco sauce.  Sprinkle third cup of cheese. Bake for another 10 minutes.

Serve with optional sides (kids don't usually want peppers and guacamole, but you can try!)
