Today is officially the first day of spring, and my family is celebrating with SPRING ROLLS!<\/p>\n

Last week, the Tuesday Crew (that is what I am calling us from now on – you may remember them from the #NintendoEnthused post) got together to learn to make Vietnamese spring rolls. \u00a0We “gently convinced”* @thienkim (whose spring roll class at Whole Foods had just been cancelled because her co-host, @cookingwithegg was injured) to show us how to make spring rolls. \u00a0I don’t know about anyone else, but I was pretty impressed when she made the eggs with chopsticks.<\/p>\n

Fast forward to the first day of spring…<\/p>\n

After I told my cousin about my spring roll adventure, she went to the Asian market near her, and got some tapioca sheets (rice) for me.<\/p>\n

So I headed to Giant to get the rest of the ingredients.<\/p>\n

I already had:<\/strong><\/p>\n

Eggs<\/p>\n

Tapioca Sheets<\/p>\n

Soy Sauce<\/p>\n

Vinegar<\/p>\n

Sugar<\/p>\n

Salt<\/p>\n

Basmati Rice (as the side – no special reason for the type of rice, it was just the only rice I had)<\/p>\n

I needed:<\/strong><\/p>\n

Cucumbers<\/p>\n

Cole Slaw Mix<\/p>\n

Chicken<\/p>\n

Shrimp<\/p>\n

Rice Flour Noodles<\/p>\n

Unsalted peanuts<\/p>\n

Hoisin Sauce<\/p>\n

Snow Pea Pods (used them as a side)<\/p>\n

The whole process was pretty fast. <\/strong><\/p>\n
