Today is officially the first day of spring, and my family is celebrating with SPRING ROLLS!
Last week, the Tuesday Crew (that is what I am calling us from now on – you may remember them from the #NintendoEnthused post) got together to learn to make Vietnamese spring rolls. We “gently convinced”* @thienkim (whose spring roll class at Whole Foods had just been cancelled because her co-host, @cookingwithegg was injured) to show us how to make spring rolls. I don’t know about anyone else, but I was pretty impressed when she made the eggs with chopsticks.

*Okay, we begged a little.

Fast forward to the first day of spring…
After I told my cousin about my spring roll adventure, she went to the Asian market near her, and got some tapioca sheets (rice) for me.
So I headed to Giant to get the rest of the ingredients.
I already had:
Eggs
Tapioca Sheets
Soy Sauce
Vinegar
Sugar
Salt
Basmati Rice (as the side – no special reason for the type of rice, it was just the only rice I had)
I needed:
Cucumbers
Cole Slaw Mix
Chicken
Shrimp
Rice Flour Noodles
Unsalted peanuts
Hoisin Sauce
Snow Pea Pods (used them as a side)
The whole process was pretty fast.
- I boiled the noodles briefly, and rinsed them
- Cooked the eggs, chicken, and shrimp, then cut it up
- Put the cole slaw mix in vinegar, sugar, and salt
- Peeled and cut the cucumbers
- Crushed the peanuts
- Put a little lemon juice and soy sauce in the Hoisin and mixed it
- Wet the sheets, and put them on plates so that they could wrap their own seconds
